Once the sun sets things can get pretty weird at Hicks orchard, take a hayride through the ogre filled orchards and perilous pine forests on the way to the Apple Barn and enormous Haunted Barn next door. There will be lots of barnyard entertainment and festive decorations, hot apple cider donuts, caramel apples and a bbq!   Hicks Orchard gates swing open to unveil tree limbs loaded and bending from the weight of gigantically delicious apples, it’s the beginning of their 91st U-pick Season and you won’t want to miss it. In addition to apples, you’ll find wet and wonderful pears and plump, purple plums hanging heavy and kissed golden from the sun, just waiting for you to pick.

Apple Cranberry Pie
makes 8 servings
6 apples, peeled & cored
1/2 c. dried cranberries, divided
3/4 c. all purpose flour
3/4 c. packed brown sugar
1/2 tsp. salt
1/2 c. cold butter, cut into cubes

Place rack in center of oven; preheat to 375 degrees
Cut apples into 1/2 in. wedges. Grease a  2 qt. baking dish, add apples and 1/4 c. cranberries; toss to combine.
Mix flour, sugar, salt and remaining cranberries. Sprinkle cubes of butter over flour mixture. Using pastry blender or two knives, cut butter into flour until mixture resembles course crumbs. Sprinkle topping over apple-cranberry mixture. Bake 30-40 minutes, or until apples are tender and the topping is golden and crisp. Serve with ice cream if desired.

Dutch Apple Pancakes
makes 6 servings
2 golden and/or red delicious apples, sliced
2 tbs. cinnamon flavored sugar
4 eggs
1 c. milk
1 c. all purpose flour

Heat oven to 400 degrees. Coat a 10 inch ovenproof skillet with cooking spray, and cook apples and cinnamon sugar for 5 minutes over medium heat. Turn occasionally. Remove; keep warm.  In blender, blend remaining ingredients until smooth. Pour batter into pan; bake 30 minutes or until puffed and brown. Arrange apples on top; serve with maple syrup if desired.

For a festive and fun table decoration,  you can make an "apple stack" candleholder. Simply core an apple and stack it on top of another one (try using one red apple and one green one), using toothpicks to hold them together. Then taper your candle to fit inside the top apple.
